  • Nanotechnology, carbon nanotubes (CNT) application: CNTs can be applied not only to special surface treatment but also biosensing in food industries, i.e. CNT modified electrode.
  • Biosensors: SPR biosensor for detection of pathogens such as Salmonella and Listeria in eggs, meat, juice, and milk. Fiber optic fluorescence based biosensors will be applied to monitor pathogens in food and health sectors.
  • FTIR spectroscopy: Measurement of sugars and sweeteners in dairy and other liquid type foods, kavalactones in kava juices, and microbial detection in liquid foods.

Research activities in my laboratory have been directed towards exploring potential methods of improving animal growth performance and carcass composition based on our current understanding of the molecular mechanisms of action of growth regulation. Recent works are mostly related to myostatin, a potent negative regulator of skeletal muscle growth. 

  • Understanding of the mechanisms of action of myostatin in regulating skeletal muscle development and growth.
  • Production of recombinant proteins interacting with myostatin, including myostatin prodomain, extracellular domain of activin type IIB receptors and investigation of myostatin suppressing activity of those molecules in vitro and in vivo system. 

In addition, we have been investigated the meat quality characteristics of locally produced, forage-finished beef, as well as exploring innovative ways to improve the marketability of low-value cuts of the forage-finished carcasses.

My research interests focus on diet, physical activity and body size factors, their influence on the process of growth and maturation, and implications for health and disease. My work focuses on periods of rapid growth, including pregnancy, infancy, and adolescence. Research areas include the role of breast-feeding in maturation and growth, and the importance of variability of body size in different population groups for risk of disease. With broader implications to aquaculture and biomedical research, my main interests are in: 1) osmoreception: the signal transduction of environmental salinity changes into physiological responses at the cellular and organismic levels in fish; regulation of prolactin cells by external and neuroendocrine factors and the role of second messenger systems; 2) osmoregulation: salt and water balance and its interplay with growth, metabolism and stress in fish; and 3) environmental adaptation and growth in fish: endocrine and specialized cellular responses to changing environmental conditions.

Dr. Vincent is currently an Animal Scientist (Researcher) and Professor in the Department of Human Nutrition, Food and Animal Sciences.  From July 1, 2009 through December 31, 2013, Dr. Vincent served as Department Chair in HNFAS.  From June 1, 2002 through July 1, 2009, Dr. Vincent served in the CTAHR Office of Research, first as the Interim Assistant Director for  Research and in November 2002, Dr. Vincent was named the Special Program Director for Contracts and Grants.  In that capacity, Dr. Vincent was responsible for the management of USDA NIFA Special Research Grants and USDA ARS Specific Cooperative Agreements to CTAHR.  This includes the USDA NIFA Special Research Grant "Tropical and Subtropical Agricultural Research (TSTAR). "    Dr. Vincent also served as Interim Associate Dean and Associate Director for Research from August 2004 through January 2005.  He was Department Chair of the Department of Animal Sciences from 1994 until 2000, Interim Chair of the Department of Food Science and Human Nutrition from 1998 to 2000, and Chair of the merged Department of Human Nutrition, Food and Animal Sciences from 2000 to 2002.  Dr. Vincent's major research interests are in reproductive endocrinology of domestic animals. His expertise and research interest ranges from regulation of corpus luteum function during maternal recognition of pregnancy to the impact of the environment on reproductive efficiency. Other interests include the role of progesterone in the regulation of prostaglandin F2-alpha during the sheep estrous cycle; the impact of grazing sytems on reproductive efficiency in beef cattle; especially how grazing pastures with high tropical legume content affect onset of puberty and post partum rebreeding. Dr. Vincent also has interests in Agricultural and Research Ethics. He has participated in workshops and is current among the UH faculty participating in the NSF-funded Land Grant Research Ethics (LANGURE) program, a national collaboration of eight land grant and historically black universities, a private corporation. Dr. Vincent is a current member and has served as Chair of the University of Hawaii Institutional Animal Care and Use Committee.
