Food Science and Human Nutrition’s latest edition adds an interactive layer

Congrats to Marie Kainoa Fialkowski Revilla of the Dept. of Human Nutrition, Food and Animal Sciences; Kellie Taguchi of the Academic and Student Affairs Office; and the UHM Food Science and Human Nutrition Program for its latest edition of Human Nutrition.

The original textbook serves as an introduction to nutrition for undergraduate students and covers basic concepts in human nutrition, key information about essential nutrients, basic nutritional assessment, and nutrition across the lifespan.

The new 2020 edition adds an interactive layer, with 176 embedded learning activities, 100+ flashcards at the end of relevant sections to help students review definitions of important terms, and 50+ drag-and-drop activities to reinforce the learning objectives. These activities are designed to add engagement with the content, and support student learning through formative practice and immediate feedback. The book also provides an instructor-focused website with additional resources for adoption.

“Human Nutrition textbook is one of our most successful projects,” says William Chismar, Dean of the UH Outreach College. “In addition to being used around Hawai‘i, the textbook is being adopted at schools across the US, providing great recognition to CTAHR and UHM.”

Kainoa adds, “Our efforts on this project truly demonstrate the value of working together, ho‘okahi ka ‘ilau like ana.”
