Want to get beyond the refrigerator? Look into the Master Food Preserver Certificate Program, which will be offered through UH Hilo’s College of Continuing Education and Community Service (CCECS) at the Palamanui campus in June. The class is for people who have a strong interest in learning how to develop their own jams and jellies, can acid foods, pressure-can low-acid foods, pickle and ferment, dry, freeze, and create charcuterie. It runs over three weeks: week 1 is Friday, June 1, from noon to 6:00 p.m.; Saturday, June 2, from 9:00 a.m. to 3:00 p.m.; and Sunday, June 3, from 9:00 a.m. to 3:00 p.m. Week 2 is Friday, June 8, from noon to 6:00 p.m.; Saturday, June 9, from 9:00 a.m. to 3:00 p.m.; and Sunday, June 10, from 9:00 a.m. to 3:00 p.m. Week 3 is Saturday, June 16, from 9:00 a.m. to 3:00 p.m., and Sunday, June 17, from 9:00 a.m. to 3:00 p.m. Tuition is $200.
