Locally Sourced

By Nick Sinclair

What started out as a hobby for four graduate students has started to become much more than that. Bitter Root Brewery (BRB for short) is a student-run business. Our ginger beer, or the O.G. (the Original Ginger) was created in a Fermentation Biochemistry class offered in the Dept. of Molecular Biosciences and Bioengineering.

After perfecting the recipe and joining forces, Nick Cetraro, Mark Oandasan, Angel Valdez and myself have turned this class project into a small business. What makes our drink and small business unique is that our Ginger Beer is an alcoholic beverage running about 6.5% ABV, not to mention that all ingredients are locally sourced.

Being able to partner with the Fermentation Biochemistry class allows us to also help train future brewers who also have an interest in the science behind it. Although we are not currently up and running as a full-blown brewery just yet, we are currently fundraising to help get us to a place where we can turn this into a fully operating brewery. Our mission is to create tasty beverages using locally sourced ingredients that will support local businesses, farmers, students, and communities alike. Bitter Root Brewing is From Hawai’i, For Hawai’i.
