UH Animal Science researchers are part of a transgenic study that successfully altered pigs to produce microbial enzymes in their saliva that could make swine digestion more efficient and reduce environmental impacts of swine operations.
In a one-two pathogen punch, Food Science MS students Cherisse Chun and Bog Eum (Grace) Lee won the top two honors in the Food Microbiology Division Student Competition at the 2018 Institute of Food Technologists meeting at Chicago.
HNFAS grad student Nirvay Sah's work on egg fomulation in hen oviducts won a best research and presentation award and a travel grant to receive it at the 2018 Poultry Science Association in Texas.
Alan Martin—the first student pursuing a culinology degree through a 2+2 Kapi‘olani Community College+CTAHR food science program—is already putting his education to work as a baker at the Kahala Hotel and Resort.
